Ingredients (in order)
- 5 tbsp olive oil
- 1/2 eggplant, cubed
- 1 onion
- 3 tomatoes, cubed
- ¼ cup celery
- Salt & pepper (to taste)
- MEDITERRANEAN Bar to Cook
- 1½ cup water
- ½ cup green olives
- 2 tbsp capers
- 4 tbsp red wine vinegar
Preparation
1. In a large sauce pan, brown your eggplant and onion in the olive oil
2. Add the tomatoes, celery and salt & pepper to taste.
3. Melt the MEDITERRANEAN Bar to Cook and add the water
4. Let it simmer for 10 minutes
5. Add the olives, capers and red wine vinegar.
6. Let it simmer for an additional 10 minutes until well thicken
7. Refrigerate overnight (or until fully chilled)
8. Serve and enjoy ! ;)
