Minestrone Soup | Mediterranean Sauce Bar

Ingredients (in order)

  • 3 tbsp olive oil
  • 1/2 onion
  • 1 can of crushed tomatoes
  • Salt & pepper to taste
  • 1 Mediterranean Sauce Bar
  • 4 cups of water
  • 1/2 cup assorted frozen vegetables
  • 1/2 cup red beans
  • 1 1/2 cups pasta (shell pasta or other small pasta of your choice)

Preparation

  1. In a saucepan, cook the onions in olive oil
  2. Add the crushed tomatoes, salt & pepper
  3. Add the Mediterranean sauce bar
  4. Add the 4 cups of water
  5. Cover for 10 minutes
  6. Add frozen vegetables, red beans & pasta.
  7. Cover for an additional 10 minutes
  8. Serve and enjoy!
