Ingredients (in order)
- 3 tbsp olive oil
- 1/2 red onion
- 1 can of crushed tomatoes
- Salt & pepper to taste
- 1 Tex-Mex sauce bar
- 4 cups of water
- 1 cup diced peppers
- 1 cup corn (canned)
- 1 cup red beans
- Sour cream (as much as you want)
- Tortilla chips (for garnish - optional) Cilantro
Preparation
- In a saucepan, cook the onions in olive oil
- Add the crushed tomatoes, salt & pepper
- Add the Tex-Mex sauce bar and melt it
- Add the 4 cups of water
- Add peppers, corn & red beans
- Cover for 20 minutes
- Garnish with sour cream, tortillas & cilantro
- Serve and enjoy!
