Mexican Soup | Tex-Mex Sauce Bar

Ingredients (in order)

  • 3 tbsp olive oil
  • 1/2 red onion
  • 1 can of crushed tomatoes
  • Salt & pepper to taste
  • 1 Tex-Mex sauce bar
  • 4 cups of water
  • 1 cup diced peppers
  • 1 cup corn (canned)
  • 1 cup red beans
  • Sour cream (as much as you want)
  • Tortilla chips (for garnish - optional) Cilantro

Preparation

  1. In a saucepan, cook the onions in olive oil
  2. Add the crushed tomatoes, salt & pepper
  3. Add the Tex-Mex sauce bar and melt it
  4. Add the 4 cups of water
  5. Add peppers, corn & red beans
  6. Cover for 20 minutes
  7. Garnish with sour cream, tortillas & cilantro
  8. Serve and enjoy!
