Vegetarian Tofu & Vegetable Curry | Indian Sauce Bar

Ingredients (in order)

  • 3 tbsp olive oil
  • 400 g of tofu (we like extra firm tofu)
  • Salt & pepper to taste
  • Half an onion
  • 3 carrots
  • 1 zucchini
  • 1 large sweet potato
  • The Indian Sauce Bar
  • 1 1⁄2 cups water
  • 1⁄2 cup coconut milk

Preparation

  1. In a saucepan, brown the tofu in olive oil
    2. Add salt & pepper to taste
    3. Reserve the tofu
    4. Brown your chopped vegetables
    5. In the same pan, melt the Indian bar with your vegetables

    6. Add water and simmer until vegetables are 80% cooked.
    7. Put back the tofu & add the coconut milk
    8. Cover and simmer for another 10 minutes.
    9. Serve over basmati rice (or alone) & enjoy!
