Ingredients (in order)
- 5 tablespoons olive oil
- 1/2 eggplant cut into cubes
- 1 onion
- 3 tomatoes, diced
- ¼ cup celery
- Salt and pepper (to taste)
- Mediterranean Sauce Bar
- 1½ cups water
- ½ cup green olives
- 2 tablespoons capers
- 4 tablespoons red wine vinegar
Preparation
- In a large saucepan, brown your eggplant and onion in olive oil
- Add tomatoes, celery and salt and pepper to taste.
- Melt the MEDITERRANEAN bar and add the water
- Let simmer for 10 minutes
- Add the olives, capers and red wine vinegar.
- Simmer for another 10 minutes until thickened.
- Refrigerate overnight (or until completely chilled)
- Serve and enjoy! ;)
