Sicilian Caponata | Mediterranean Sauce Bar

Ingredients (in order)

  • 5 tablespoons olive oil
  • 1/2 eggplant cut into cubes
  • 1 onion
  • 3 tomatoes, diced
  • ¼ cup celery
  • Salt and pepper (to taste)
  • Mediterranean Sauce Bar
  • 1½ cups water
  • ½ cup green olives
  • 2 tablespoons capers
  • 4 tablespoons red wine vinegar

Preparation

  1. In a large saucepan, brown your eggplant and onion in olive oil
  2. Add tomatoes, celery and salt and pepper to taste.
  3. Melt the MEDITERRANEAN bar and add the water
  4. Let simmer for 10 minutes
  5. Add the olives, capers and red wine vinegar.
  6. Simmer for another 10 minutes until thickened.
  7. Refrigerate overnight (or until completely chilled)
  8. Serve and enjoy! ;)
